Our Kansas City conference ended just over a week ago with a good time had by all attendees. We will do a full report of our highly successful and praised Kansas City Conference in next month’s issue. Until then, here are some of the random comments received thus far…

FCSI TA Mourns the loss of a Member

Allan P. King Jr., Principal, Allan King and Friends
July 30, 1941 - March 1, 2012

Allan King passed away at age 70 at his residence in Reno, Nevada. He is survived by his children Gregory King of Reno, Nevada, Jeffrey King of Roseville, California, and Lorrie Adams (Jerry) of Reno, Nevada; step-children Christopher Blair of Manhattan, Nevada, and Lise Crittenden (Scott) of Irmo, South Carolina; a sister, Elizabeth King of Carson City, Nevada and her son Scott King; one grandchild, Will Crittenden; and his beloved pet Zachary. He was preceded in death by his wife Wendy and parents Allan Sr. and Janie King.

Allan was in the foodservice industry for over 40 years. He began his career in the 1960's as a draftsman for a restaurant supply house and went on to found his design consulting firm, Allan King and Friends, in 1979. He was a member of FCSI for many years and had earned the CFSP designation from NAFEM. His clients included many of the major hotel-casinos in Nevada, as well as numerous correctional facilities, schools, hospitals, convention centers, and restaurants. Among the honors he received were Restaurant Hospitality Magazine's "Excellence in Kitchen Design" award for Steven Lake Tahoe restaurant, Incline Village, Nevada and a National Historic Preservation award for his work for the Eureka Opera House in Eureka, Nevada. Allan had been in poor health in recent years and was semi-retired at the time of his death. He will be interred in the Rose Garden at Mountain View Cemetery in Reno, Nevada. There will be no services. In lieu of flowers, the family suggests donations to the FCSI Educational Foundation, your local animal shelter, or other favorite charity.

The Americas Quarterly
Invitation to Enter the Project Showcase Issue

The Project Showcase issue, mailing November, 2012, will recognize the very best work of FCSI-The Americas Design and MAS foodservice consultants and publish the selected projects in a glossy, graphic, keepsake issue.

From Design consultants, we are looking for quality foodservice designs that combine the highest aesthetic with superb, innovative functionality.

From MAS consultants, we are looking for descriptions of how your unique, well-executed management advisory plans achieved and even exceeded clients’ goals.

Submissions are limited to one entry per Professional or Senior Associate FCSI member. You must be a member of FCSI - The Americas Division to enter.

Eligibility

Any foodservice facility or MAS project designed and/or implemented by an FCSI professional or senior associate member between Jan. 1, 2010 and Jan. 1, 2012. The project must have been completed/operational prior to Jan. 1, 2012.

How To Enter

First, let us know your intention to enter. Contact Beth Lorenzini and ask for an Entry Application; specify if you need one for a Design project or one for an MAS project, or both. Fill out your application and e-mail, fax or send it ASAP to:

Complete entry instructions will be sent to you as soon as you request the application. Please note: Your design entry will require professional photography of the project, a numbered floorplan with an accompanying equipment schedule that includes manufacturer brands, and a second version of the floorplan stripped of numbers for publication use. FCSI The Americas Quarterly also will ask for the names, cities and states of the architectural, engineering, interior design, and fabrication companies with whom you worked and the principals involved.

Tom Costello to Receive 2012 Peter Goldman Award of Excellence

The Hotel Council of San Francisco has announced the selection of Tom Costello, FFCSI as the Hotel Council’s recipient of the 2012 Peter Goldman Award of Excellence.

The Peter Goldman Award of Excellence was established in 1989 to honor an individual who exemplifies outstanding education and devotion to our industry and demonstrates leadership with skills and energy that raises the level of service and perception of our San Francisco hotel and tourism industry.

For over twenty-one years as the Director of the University of San Francisco’s Hospitality Management Program, Tom has done just that! Tom’s selfless dedication, compassion, and excellence have set an example to so many. Tom is a legendary presence in the classroom and has a legion of devoted students and successful graduates. For the past fifteen years, the Hospitality Management Program has consistently enjoyed a 98% placement upon graduation. With his enthusiasm, passion, and love of the industry, Tom has touched the hearts of his students, many of whom go on to be leaders of our industry.

In 2008, Tom received the Educator of the Year Award by the SF Hotel & Restaurant Foundation. Tom has served on the education committees for the California Restaurant Association Educational Foundation, California Hotel & Lodging Association, Golden Gate Restaurant Association and the Hotel & Restaurant Foundation. Not only is Tom a mentor to so many in the Hospitality Industry, he is also the published author of Gut-Level Management: Situations That Can Make or Break Your Foodservice Business.

Tom received a B.A. from Loyola University in Chicago and M.A. from St. Louis University. He has also taught at California State Polytechnic University and City College of San Francisco. Prior to teaching he was a managing partner for Deer Park Tavern in Aptos, California.

After officially giving notice a year ago, Tom retired on December 31, 2011, and is enjoying traveling with his wife, Sallie, enjoying his children, their families and new grandson Mackay. He continues to be devoted to the industry by conducting seminars and doing consulting projects for which he is so well known.
