Professional consultant in integral design of industrial kitchens, I am lucky enough to venture into this area from a very early age, as a teenager I worked as a waiter in a small catering, ... it is actually at this moment where I begin to know the world of kitchen operations food service, however my Systems Engineering studies made me move away from the gastronomic world, at the beginning of the year 2000 I started working in a small company that sells kitchen equipment and it is at this point where I set my attention to development of kitchen projects "Kitchen Systems", being a Systems Engineering student, I was instilled a lot with the analysis, order and integration of processes, beyond the computer theme, I decided to integrate my knowledge to food production systems. Kitchens are concatenated process systems that follow a logical order, today we are in a technological revolution, we as FoodService professionals must keep an eye on new trends in order to contribute our experience and knowledge. Consultor profesional en diseño integral de cocinas industriales, tengo la suerte de incursionar en este rubro desde muy temprana edad, siendo adolescente colaboraba como mozo en un pequeño catering, … es en realidad en este momento en donde empiezo a conocer el mundo de las operaciones de servicio de alimentos, sin embargo mis estudios de Ingeniería de Sistemas hicieron que me alejara un poco del mundo gastronómico, a inicios del año 2000 empecé a trabajar en una pequeña empresa comercializadora de equipos de cocina y es en este punto en donde fijo mi atención al desarrollo de proyectos de cocina “Sistemas de Cocina”, al ser un estudiante de Ingeniería de Sistemas se me inculcó mucho el análisis, orden e integración de procesos, más allá del tema informático, decidí integrar mis conocimientos a los sistemas de producción de alimentos. Las cocinas son sistemas de procesos concatenados que siguen un orden lógico, hoy por hoy nos encontramos en una revolución tecnológica, nosotros como profesionales de FoodService debemos mantenernos atentos a las nuevas tendencias para poder así aportar nuestra experiencia y conocimiento.
