The Control Freak™ induction cooking system from Sous Vide Tools has won the title of ‘Best New Idea’ at this year’s ‘Restaurant Show’

Launched at the Restaurant Show the Control Freak™ is the first unit of its kind that can accurately measure, set and hold 397 cooking temperatures from 30°-252°C. The unique real-time sensing system uses a through-glass sensor to directly measure surface temperature whilst the Probe Control™ remote thermometer precisely controls the temperature of both water and fat-based liquids. The ‘Intensity’ function gives incredible control over the heat up speed to the set temperature and the ‘Create’ function stores frequently used custom temperature profiles for simple one-touch recall. The Control Freak™ operates from a standard 13amp socket and comes with a 2 year parts and labour warranty.

Offering precise temperature control to half a degree and a power range of 100-1800 watts, the Control Freak™ is ideal for cooking a wide range of sauces and is particularly useful for creating items that require very specific temperature control. For example, custard, which can be heated to exactly 81°C in order to pasteurise the eggs, but not a degree more, to ensure that it doesn’t ‘split’.
