The FoodSpace® Combi Challenge Seeks to Arm Kitchen Cowboys with the Right Tools

It’s the wild west of culinary innovation, and finding the right equipment isn’t just about convenience, it’s about survival

FoodSpace®, a foodservice consulting firm based in Meridian, Idaho, aims to provide independent research that is both entertaining and educational with its American West inspired Combi Challenge.

Like the cowboys who tamed the frontier, today’s Chefs and Kitchen Managers must wrangle complex challenges such as labor shortages, space constraints, consistency demands, and versatility. FoodSpace is determined to test each feature offered by the top of the line of Combi-Ovens in a week-long, multi-oven, showdown. The goal is to uncover the pros and cons of each model to offer real, data driven insights for food industry professionals.

From August 11th to August 15th, a series of controlled cooking sessions will put these kitchen workhorses to the test. By using identical recipes in each of the different models, side by side, we will see firsthand how they handle everything from pastry to hearty proteins.

Each session will be evaluated blindly by a panel scoring performance metrics like texture, moisture retention, temperature, and overall quality. Culinary professionals will also be evaluating each oven for ease of use, user interface, and automatic function. The results will contribute to an in-depth analysis of the ovens aimed at assisting industry professionals to make confident, informed decisions when selecting the right Combi-Oven for their operations.
