In the latest episode in a short series of video interviews from the NAFEM 2023 Show, in Orlando, Florida, US, Mark Dempsey, Consulting Director, GlobalData, gives Michael Jones, editorial director of FCSI’s Foodservice Consultant, his views on his first NAFEM Show.
“First impressions are just…’Wow’,” says Dempsey, who also gave his short- and long-term prognosis for the state of the industry. “Foodservice ‘the recovery’ is back. We’ve got some short-term tactical challenges with the economy and supply chains, which will have a knock-on effect on price, but let’s look at the bigger picture: 2023 is a recovery year; a return to ‘healthy’, ‘experience’, and new global cuisines that the consumer is going to want to experience,” he says, citing that ‘experience’, ‘indulgence’ and ‘authenticity’ will all be key consumer trends to watch for, going forward.
“It’s perhaps a return to the ‘connoisseur consumer’,” he says.
