Electrolux redefines blast chilling with launch of industry-first ‘smart’ appliance

The Electrolux SkyLine ChillS range is a breed apart from any other blast chiller on the market

Electrolux has launched the SkyLine ChillS Blast Chillers range: the culmination of company’s 30 years’ experience in engineering and developing high-performing, intuitive and efficient blast chillers.

Combining smart technology with human-centred design, the Electrolux SkyLine ChillS range is a breed apart from any other blast chiller on the market.

Able to deliver high efficiency and superb chilling performance thanks to the use of low GWP R425a refrigerant and Climate Class 5 rating, it offers a broad range of chilling functions ranging from -41°C to +30°C. As such, not only can it be used for chilling, but it can also double-up as a proving appliance.

In an industry first, a built-in Cruise Cycle automatically adjusts the chilling cycle according to food size, while monitoring the process from start to finish.  The chiller also features ARTE 2.0*, which provides a real-time countdown to provide clarity on anticipated completion times for probe-driven chill or freeze cycles.

The X-Freeze fast freezing function speeds up the freezing process to preserve appearance, texture and flavour via the formation of micro-crystals which maintain water content during thawing and regeneration.

The SkyLine ChillS also features a host of unique functions, all aimed at improving kitchen workflow. Once such feature is the innovative ‘Sushi and Sashimi’ cycle, keeps fish anisakis-free by blast-freezing it at -20°C and holding it at this temperature for 24 hours (in line with EU regulation 853/2004) before thawing ready for service.

Others include dedicated cycles for tempering chocolate and fermenting yoghurt, as well as proving and retarded proving cycles for breads and pastries, and a Fast Thawing cycle. This uses OptiFlow intelligent air management technology thaw foods quickly and efficiently in accordance with HACCP standards.

Increasing productivity

Moreover, SkyLine ChillS is the first ever blast chiller to receive the Ergocert’s 4-star certification for ergonomics, thus contributing to potential 75% reduction in sick leave and 25% increase in operator productivity.

The new SkyTouch touch screen user interface allow operators to choose among three different cooking modes – manual, programs, automatic – with just one touch, for fast an intuiative programming.

One of the stand-out features which sets the SkyLine ChillS apart from other blast chillers is its connectivity. Not only can it directly communicate with the newly-launched SkyLine PremiumS range of combi ovens, but all data – from running costs through to cycle programming – can be remotely monitored 24/7 via Electrolux’s OnE online portal. This can provide a transparent insight into operational efficiency for kitchens with multiple appliance, or companies with multiple sites, such as the chain market, with the ultimate aim of increasing equipment uptime and maximising profit.
