Cleanability and your commercial kitchen

Are your grease management and drainage systems easy to clean? Cleanability has a significant impact on the health of any commercial kitchen as well as its hygienic performance

Waste water management has a major impact on the hygienic performance of any foodservice facility and its design has a significant impact on cleanliness – what we at ACO call ‘cleanability’. Yet the wider impact of cleanability on the healthy and efficient operation of a foodservice business is often overlooked. So why is cleanability so important?

1. Time and money

The impact of cleanability on the health of a foodservice business was proven by a recent research study undertaken by research institute, Fraunhofer IVV Dresden. Commissioned by ACO, this independent study was designed to fully assess the impact of hygienic design on drainage performance.  We wanted to know how the application of hygienic design impacted upon the cleanability of drainage channels and as a consequence, hygiene and cleaning costs.

The research compared the performance of ACO’s hygienically designed drainage channel with another channel whose design is typical of those in use. It found that hygienically designed drainage channels can be effectively and completely cleaned in less than 10 minutes whereas non-hygienic channel still has 2 per cent residual soiling after an extended rinsing time of over two hours.

Cleanability clearly has a huge impact on the amount of time and money your foodservice business will spend on cleaning and cleaning materials.

2.  Your employees

No matter how robust your cleaning protocol and how committed your employees are to cleaning your commercial kitchen, they may well be tempted to cut corners if cleaning is a difficult and time consuming process.

3.  The environment
